I love dates and these tasty squares are a real treat.
They hold together well and stay moist.
DATE SQUARES
***************
1 1/4 cups all purpose flour
1 1/2 cups rolled oats
1 cup packed brown sugar
1 tsp baking soda
1/2 tsp salt
1 cup butter or margarine
〰〰〰〰
500 gm package dates - cut up ( about 1/2 lb)
1/2 cup sugar
2/3 cup water
〰〰〰〰
Mix flour, oats, sugar, soda and salt in a large bowl.
Add butter and mix until mixture is crumbly.
Press 2/3 of the mixture into a greased square cake pan. (9x9)
Set aside.
In a saucepan, combine the cut up dates, sugar and water.
Bring to a boil and simmer until mixture is mushy.
You may need to add a bit more water if the dates are not softened enough.
Spread date mixture over crumb mixture in cake pan.
Sprinkle with remaining crumb mixture and flatten down with your hand.
〰〰〰〰
Bake at 350 * F for 25-35 minutes or until it is a nice golden brown color.
Cool completely before cutting into squares.
