Peanut Butter Squares

Since these have cereal in them, can we call them breakfast?
Hmmmm......I do love Peanut butter!!!

PEANUT BUTTER SQUARES
*******************************
1/2 cup corn syrup
1/2 cup brown sugar
1/2 cup peanut butter
2 cups corn flake cereal
1 cup Rice Krispie cereal

In a medium saucepan, heat brown sugar and corn syrup.
Stir until sugar is devolved.
Add peanut butter.
Remove from heat.
Stir until blended and smooth.

Add corn flakes and Rice Krispie cereal. Mix to coat cereal.

Pat into a 9X9" pan
😊
This is the icing, but pay attention to the instructions......

1 cup brown sugar
3 tbsp cream or milk 
2 tbsp butter
1/2 - 1 cup icing sugar

Put brown sugar, milk and butter into a medium saucepan.
Bring to a boil over medium - high heat.
Add icing sugar.
Only enough to make the icing spreadable.

Ok........ Now spread the icing.....

OH Henry Bars

You have got to try this recipe...

Whole graham crackers 
3/4 cup butter
2/3 cup brown sugar
1/2 cup milk
1 1/2 cup graham cracker crumbs

Put whole graham wafers into a 9x9 pan..
You will have to trim them to fit.
💖
In a medium saucepan, combine butter, sugar and milk.
Bring to a boil and simmer for 4-5 minutes.
Remove from heat.

Stir crumbs into saucepan mixture,
Mix well.
Pour over graham crackers in pan.
💖
Cover with another layer of whole graham crackers. Trimmed to fit of course.
💖
When totally cool, ice with;
1 1/2 cups icing sugar,
4 tbsp butter,
2 tbsp water,
1 tsp vanilla
.......
Mix well and ice squares in pan.

( you may  have to add a bit more icing  sugar to make the mixture easy to spread)

Coconut Roll

COCONUT ROLL

1 1/2 cups coconut 
1/2 cup peanut butter
2 tbsp corn syrup
Extra coconut to roll log in 
⭐️⭐️⭐️
In a bowl, combine coconut, peanut butter and corn syrup.
Mix well.
Form into a log.
Roll in coconut to coat the outside.
Wrap in plastic wrap and put n the fridge.
Slice when ready to serve.

Saucy Chops

These are so good....
It takes only a few minutes to put together and then pop it in the oven.

SAUCY CHOPS

6-8 pork chops
1 medium onion - chopped
3/4 cup ketchup
1/3 cup brown sugar
5 tbsp vinegar
3 tbsp soy sauce
Pinch of salt and pepper
〰➰〰
In a frying pan, lightly brown pork chops on both sides.
Transfer chops to a casserole dish or roaster.
Mix ketchup, brown sugar, vinegar, soy sauce and salt and pepper.
Add onion.
Pour mixture over chops

Cover and bake at 350*F for about 1 hour.

Puffed Wheat Squares

This is a real classic recipe.
I think everyone had these as a kid.

PUFFED WHEAT SQUARES

8 cups puffed wheat
1/3 cup butter
1/2 cup corn syrup
2/3 cup brown sugar
2 1/2 tbsp cocoa powder
1 tsp vanilla

In a large bowl put puffed wheat.
Set aside.
💙💛💜
In a medium saucepan, combine butter, corn syrup, brown sugar, cocoa powder and vanilla.
Bring to a boil over medium heat, stirring constantly.
💙💛💜
Pour the hot mixture over the puffed wheat.
Use a plastic spatula to get all the hot mixture out of the saucepan.
Mix until well coated.
💙💛💜
Spoon into a greased 9x9" pan.
Press down.
Chill for 2-3 hours before cutting.

Eggplant Parmesan 🍆🍆🍆

I have to say right off.....I have really disliked eggplant my entire life...
Yep....I said it. 
I do not like eggplant!!
Well....
That was before I made this..
Now I LOVE eggplant!!

EGGPLANT PARMESAN 
***********************
2 large eggplants - sliced 1/2 " thick
4-6 tbsp kosher salt
2 cups seasoned breadcrumbs
3 eggs
1/3 cup milk
6 tbsp olive oil for pan frying the eggplant
4 cups pasta sauce
3 cups shredded mozzarella cheese
2 cups shredded Parmesan cheese

Pat salt onto both sides of eggplant slices.
Set to drain in a strainer for about an hour.
I then lightly rinse off the salt and blot the eggplant between layers of paper towel to dry.

In a bowl, put breadcrumbs.
In another bowl, whisk eggs and milk.
🍆🍆🍆
Before frying the eggplant, put 1 cup of the pasta sauce on the bottom of the pan.
Spread around to coat the bottom of the pan.
🍆🍆
 Take the eggplant slices and dip in the egg mixture and then the breadcrumbs.
Lightly fry at medium until browned on both sides.
I can get 3 slices at a time in my frying pan.
Transfer to your baking pan that has pasta sauce on the bottom.
Top each slice with a tablespoon or so of sauce and a bit of each cheese.
I fit as many slices on the bottom as I can and then I stack them with sauce and cheese between the layers.

Finish up with a bit more sauce and cheese.
Bake for about 30 minutes at 375*F
I do broil for 3 or 4 minutes at the end to complete the browning of the dish.

French Toast 🍞

3 eggs
1 1/2 tsp sugar
1/4 tsp salt
1 cup milk
1/2 tsp vanilla
8 -10 slices of bread

In a medium bowl, mix eggs, sugar, salt, milk and vanilla.
Heat a frying pan to medium-high.
Lightly oil pan.
Dip bread slices into egg mixture and fry until nicely browned on both sides.

Stewed Beef Chunks

This dish has a really nice gravy that is perfect over mashed potatoes.
By cooking the meat at a low temperature, it comes out nice and tender.
It is also so easy to make!!

Beef stewing meat - about 2 - 2 1/2 pounds
2 tins condensed mushroom soup
1 package onion soup mix

In a casserole dish or roasting pan, mix all ingredients together.
Cover.
Bake at 325*F for 3 hours.

Lemon Pepper Linguini 🍋

This is a delicious pasta dish that makes a great meal when served with a salad.
Perfect for those meatless Monday's!

LEMON PEPPER LINGUINE
**************************
1 package linguini noodles 225-250 gm size
 3 tbsp olive oil
2-3 tsp lemon zest
3 tsp lemon juice
1/4 tsp salt
2-3 tsp coarsely ground pepper
1/4 - 1/2 cup grated Parmesan cheese

Cook pasta according to package.
Drain and return to pot.
Add olive oil, lemon zest, lemon juice, salt and pepper.
Toss to combine.
Serve with Parmesan cheese to sprinkle on top.

Strawberry Yogurt Shake

This is a great way to start your day off.
It also makes a very healthy snack.
I used to make this for my kids for after school and it was good to know that the snack was healthy for them.

STRAWBERRY YOGURT SHAKE

1 cup frozen sliced strawberries
1 cup low fat vanilla yogurt

Place sliced strawberries and yogurt in a blender.
Process until smooth.
If you need to, add a small amount of milk or orange juice to thin.

Easy French Onion Soup

This delicious soup can be made in 30 minutes.
It's satisfying and very flavourful.
We have it as meal sometimes served with garlic bread on the side.

EASY FRENCH ONION SOUP
***************************
3 large yellow or white onions - sliced
2 tbsp olive oil
4 cups beef broth
2 tbsp beef bouillon 
2 tbsp Worcestershire sauce
1/4 tsp pepper
Toasted baguette or french bread
Grated Parmesan cheese
💢💢💢
In a large pot, over medium heat, cook onions with oil until they are nicely browned and tender.
This should take about 15 minutes.
Add broth, bouillon, Worcestershire and pepper.
Bring to a boil.
Spoon soup into oven proof bowls and top with a slice of toasted bread and Parmesan cheese.
Broil for about a minute until the cheese is nice and brown.
Watch carefully as it doesn't take long.
Enjoy!

Cheese Spread 🧀

I love cheese and crackers or better yet, cheese and baguette.
Those fancy spreadable cheeses are delicious.
I can't seem to keep them in the house.
I finally figured out I had better try to make it myself.
After a lot of trial.....
 It was delicious  😊,
I came up with a simple and inexpensive version of those fancy cheeses.

SPREADABLE CHEESE

1 cup cream cheese - softened
3/4 tsp dried basil
1 1/4 tsp dill weed
2 tsp chives - chopped fine
1/4 - 1/2 tsp garlic salt

Mix all ingredients together until well blended.
Keep refrigerated until ready to use.

Rutabaga Fries 🍟

Trust me though....these are actually good.
They are so much healthier than potatatoe fries too.
Try them...

RUTABAGA FRIES

2 medium sized rutabaga - I find a single rutabaga enough for 2 people
2 tbsp olive oil
1 tsp seasoning salt
1/2 tsp black pepper
➰〰➰
Peel and cut rutabagas into long strips.
Place in a bowl or ziplock bag with oil, salt and pepper.
Place seasoned strips on a cooking sheet.
Bake at 425*F for 1 hour
Flip fries every 20 minutes to brown evenly.

Banana Pancakes 🍌

BANANA PANCAKES

1 cup flour
1 1/2 tbsp sugar
2 tsp baking powder
Pinch of salt
1 egg
2 mashed bananas
1/3 cup milk
🍌🍌
In a large bowl, combine flour, sugar, baking powder and salt.
Add egg, bananas and milk.
You may need a little more milk if the batter is too thick.
🍌🍌
Fry pancakes in a frying pan with a tbsp of oil over medium-high heat until they start to bubble and the edges start to dry.
Flip pancake over and brown the other side.

Corn and Black Bean Salad

This is a great salad!
Chilled or at room temperature, this is superb.

CORN AND BLACK BEAN SALAD
*********************************
2 - 3 cups cooked rice
1 can black beans - rinsed
1 can corn nibblets - drained
1 red pepper - diced
1 green pepper - diced

Dressing
*******
1/2 cup water
1 1/2 tbsp cornstarch 
4 tbsp sugar
3 tbsp vinegar
1 tsp Worcestershire sauce
1/2 tsp dry mustard powder
1/8 tsp pepper
🌽🌽🌽🌽🌽🌽🌽
For the salad,
Mix cooked rice, black beans, corn, red pepper and green pepper.
🌽🌽🌽🌽
For the dressing,
In a small saucepan, mix cornstarch and water.
Heat over med/high heat until thickened.
Add sugar, vinegar, Worcestershire sauce, mustard powder and pepper.
Toss with rice mixture.
Chill until ready to serve.

Sweet Potatoe Fries

I love sweet potatoes.
Whether baked, mashed, casserole........
But these are my favourite.

SWEET POTATO FRIES
**********************
3 sweet Potatos - ends cut off and washed

 3-4 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp fresh ground pepper
1/4 tsp chilli flakes
Salt
🍟🍟
Cut the Potatos into long strips.
Soak in cold water for about an hour to remove some of the starch.
( that makes for a crispier fry)
Drain and dry Potatos.
In a large bowl, combine potatoes, oil and spices.
Mix well to coat all of the potato strips.
Put Potatos on a cooking sheet in a single layer.
Bake at 425*F for 30 minutes turning halfway through cooking.

Pasta with Peas and Bacon

This simple pasta dish is very flavourful and looks great.
Use any kind of pasta you prefer.

PASTA WITH PEAS AND BACON

Cook approximately 3 cups of dry pasta
💛
While pasta is cooking,
Boil 2-3 cups of frozen peas.
💚
Meanwhile.....
In a frying pan, 
Cook....
 10-12 slices bacon - diced
1/2 onion - diced
2 cloves garlic - minced
Drain off most ....but not all of the fat.
💙
When pasta is done, drain and return to pot.
Add in cooked, drained peas.
Add in bacon mixture.
💜
Toss with a bit of olive oil.
Serve with fresh grated Parmesan cheese for sprinkling on top.

Cheese Biscuits 🧀

CHEESE BISCUITS
******************
2 cups flour
4 1/2 tsp baking powder
2 tbsp sugar
1/2 tsp salt
1 1/4 cup grated cheddar cheese - sharp or old
1/3 cup oil
3/4 cup milk
🧀🧀🧀
In a large bowl, combine flour, baking powder, sugar and salt.
Add cheese and mix in.
Add oil and milk and stir to make dough.
Add more milk if you need to.
It needs to form a soft, but not sticky dough.
On a lightly floured work surface knead gently 10 times.
Pat 1" thick.
Use a biscuit cutter or a cup to cut out circles of dough.
Put onto an ungreased baking sheet.
Brush tops with a bit of milk to brown nicer.
Bake at 425*F for about 15 minutes or until they are a nice brown color.

2 lbs ground lamb
1/8 tsp Rosemary 
1/2 tsp thyme
1 clove garlic minced
1/8 tsp salt

Form into 6-8 patties.
BBQ on medium heat until inside is just pink.
Serve on a bun with your choice of toppings.

APPLE MUFFINS WITH STREUSEL TOPPING

1 1/2 cups flour
1/2 cup sugar
3 1/2 tsp baking powder
1/2 tsp salt
1 egg
1/4 cup milk
1/4 cup oil
1 cup grated Apple

1/2 cup brown sugar
1/4 cup flour
1/4 cup butter
〰➰〰
In a large bowl, combine flour, sugar, baking powder and salt.
Add in egg, milk, oil and Apple .
Stir just until all is combined.
🍎
Spoon into greased muffin tins about 3/4 full.
🍎
For the topping, mix brown sugar, flour and butter until crumbly.
Sprinkle on top of muffins.
🍎
Bake at 400*F for 20-25 minutes.

ICED CHOCOLATE BROWNIES

1 cup butter
1/2 cup cocoa
2 cups flour
2 cups sugar
4 eggs 
4 tsp vanilla

In a large bowl, mix flour and sugar...
Set aside.

In a microwave safe bowl, melt butter.
Add cocoa to melted butter and stir well.
Mix in eggs and vanilla.
〰➰〰
Combine wet mixture with dry and stir until well combined.
Transfer to a greased 9x13" cake pan.
Bake at 350*F for 25-30 minutes.

When cool, ice.
1/4 cup butter
1/4 cup milk
1/4 cup cocoa powder

Easy Crockpot Pot Roast

Who doesn't love to come home at the end of the day to find dinner is ready?
This super easy pot roast does just that!
You put everything into the crockpot in the morning and by dinner time, it's cooked.

EASY CROCKPOT POT ROAST
*****************************
1 Roast - I buy whatever is on sale
5 potatoes - quartered
8 carrots - halved or cut into chunks
1 onion - quartered
Salt
Pepper
2 tbsp beef bouillon powder
1 cup water
〰➰〰
Place roast into crockpot.
Season with salt and pepper.
Add vegetables.
Mix bouillon powder and water in a cup.
Pour mixture into crockpot.
Cover with lid.
Cook 8-9 hours on low or 4-5 hours on high.
〰➰〰
I like to make a gravy at the end by mixing 
2 tbsp cornstarch
1/2 cup water
Add to crockpot and cook on high for 10 minutes to thicken.

Old Fashioned Tea Biscuits

These are so easy to make.
Perfect right out of the oven with a little butter or jam.
Serve them with dinner and your family will be so happy!

OLD FASHIONED TEA BISCUITS

2 cups flour
3 tbsp sugar
1 tsp salt
4 tsp baking powder
1/2 tsp cream of tarter
1/2 cup margarine or butter -cold
1 cup milk

In a large bowl combine dry ingredients.
Cut in margarine until mixture is crumbly.
Add milk stirring quickly to combine the ingredients.
Turn out onto a lightly floured work surface and knead the dough gently 10 times.
Pat dough until about 3/4 " thick and then cut with a biscuit cutter or with a glass.
Place on a greased pan.
Brush tops of biscuits with milk.
Bake at 450*F for 12-15 minutes

1/2 tsp salt
1/4 cup margarine 
1/2 cup sugar
1 egg
3/4 cup milk
3/4 tsp vanilla

In a large bowl, cream butter and sugar.
Add egg, milk and vanilla.
Mix well.
Add flour, baking powder and salt.
Stir just to moisten.
Gently fold in blueberries.

Spoon into greased muffin tins.

Bake at 400*F for about 20-25 minutes.

Hearty Macaroni Vegetable Soup 🍜

It's getting to be the time of year that I make a lot of soup.
I love the smell of a soup gently simmering on the stove.
This is an extremely simple soup that smells and tastes fantastic!

HEARTY MACARONI VEGETABLE SOUP
***************************************
5-6 cups beef broth
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
1 large tin canned tomatoes (I like the one with herbs and spices)
3/4 cup macaroni noodles 
1/2 tsp salt 
1/2 tsp pepper
Parsley for garnish if desired

Combine all ingredients except parsley in a large pot and bring to a boil.
Cover and simmer for 20-30 minutes until vegetables and macaroni are cooked.
Garnish with parsley if you desire.

Chocolate Brownies

This super fast brownie is delectable.
Rich and moist it is a true pleaser.
Serve it with or without the icing 😊

CHOCOLATE BROWNIES

1/2 cup margarine
1/4 cup cocoa powder
2 eggs
1 cup white sugar
3/4 cup flour
Pinch of salt

In a saucepan, melt margarine.
Add cocoa powder.
Remove from heat.
In a large bowl, beat eggs until they are nice and frothy.
Do not stir, but add sugar,flour,salt and cocoa mixture to eggs.
Stir to combine.
Put batter into a 8x8 pan and bake at 350*F for about 25-30 minutes.
Leave plain or frost when they are still a little bit warm.

Corn Chowder 🌽🌽🌽

Here is a very quick and delicious soup.
This doubles well and served with bread, makes a great meal!

CORN CHOWDER

5 or 6 slices of bacon - chopped
1 onion - chopped
1 carrot - chopped
2 cups fresh or frozen corn nibblets or a large can of cream corn
2 cups diced Potatos
1 can cream of mushroom soup
3 cups milk
1/4 tsp salt
1/4 tsp pepper

In a large pot, cook bacon and onion until cooked.
Add the rest of the ingredients and bring to a boil.
Simmer until the Potatos are done.

Chicken Breasts with Mushroom Sauce

This is an easy dish that is elegant enough to serve for company.
Serve with mashed potatoes or rice.
A beautiful dish!

CHICKEN BREASTS WITH MUSHROOM SAUCE

1/4 cup flour
2 tbsp sour cream
2 tsp dry mustard powder
1 cup chicken stock
4 chicken breasts ( boneless and skinless )
1/8 tsp thyme
1/8 tsp salt
1/8 tsp pepper
1 tbsp butter
1 1/2 cups sliced mushrooms
A bit of fresh parsley for garnish

In a small bowl, combine 2 tbsp flour, sour cream, mustard powder, and 2-3 tbsp chicken stock.
Set aside.
In a medium bowl, combine remaining flour, thyme salt and pepper.
Coat chicken in flour mixture.
Melt butter in a frying pan over medium - low heat.
Cook chicken for 8-10 minutes on each side or until cooked.
Put on a plate and set aside.
Put mushrooms in frying pan and cook, stirring constantly for 2-3 minutes.
Add the remaining chicken stock.
Increase heat and boil for 2-3 minutes.
Whisk in the sour cream mixture and continue stirring.
When thickened, add chicken and cook a couple of minutes more.
Serve with a bit of parsley for garnish.

Never Fail Chocolate Fudge

This is so simple to make and so rich and delicious.
Who doesn't like fudge??

NEVER FAIL CHOCOLATE FUDGE
*********************************
2/3 cup evaporated milk
1 2/3 cups white sugar
Pinch of salt
1 1/2 cups chocolate chips ( pure chocolate)
1 1/2 cups mini marshmallows 
1 1/2 tsp vanilla
〰➰〰
Bring milk, sugar and salt to a boil stirring constantly.
Remove from heat and add in chocolate chips, marshmallows and vanilla.
Stir until everything is melted and combined.
Pour into a greased 8x8 pan.
Refrigerate until set and then cut into squares.
Delicious .....

Zucchini Bread

This is a great loaf. Nice and moist.
A perfect way to use an abundance of zucchini.


ZUCCHINI BREAD
*****************
2 eggs
1/2 cup oil
1 cup sugar
1 cup grated unpeeled zucchini
1/2 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
〰➰〰
Mix eggs, oil, sugar, zucchini and vanilla.
Add flour, baking soda, baking powder, salt and cinnamon.
Stir just to moisten.
Spoon into a greased loaf pan.
Bake at 350*F for about 1 hour or until knife inserted comes out clean.
Yum.
