Really....
It is the simplest, fasted way to make cashew chicken.
Plus....it as absolutely delicious.
In the time it takes to make the rice, this dish will be finished!
This will give 4 or 5 adults a good portion each.
EASIEST CASHEW CHICKEN

5 chicken breasts - boneless, cut into 1" pieces
3 tbsp cornstarch
4 tbsp oil
4 garlic cloves, minced
3 tbsp rice vinegar
6 tbsp hosin sauce
1/3 cup water
8 green onions chopped ( separate the green parts and use for garnish)
1 1/2 cups unsalted, roasted cashews
In a med/lg bowl toss cornstarch and chicken.
Chicken should be well coated.
In a wok or large pan, heat the oil over medium-high heat.
Put in the chicken and cook and toss until it is browned.
This should take 8-10 minutes.
You may need a bit more oil if the chicken sticks too much to the pan.
Add in the minced garlic and the onion.
Cook and toss for 2-3 minutes.
Add the vinegar, hosin sauce and water to the pan.
Cook and toss until chicken is cooked through.
This should take 3-4 minutes more.
If the sauce is too thick add a bit more water to thin it out.
Take off heat and stir in cashews.
Serve with green part of onions as garnish.
