French Toast 🍞

Here is a special way to start the day!
Served with butter and maple syrup, these are fabulous!

FRENCH TOAST

3 eggs
1 1/2 tsp sugar
1/4 tsp salt
1 cup milk
1/2 tsp vanilla
8 -10 slices of bread

In a medium bowl, mix eggs, sugar, salt, milk and vanilla.
Heat a frying pan to medium-high.
Lightly oil pan.
Dip bread slices into egg mixture and fry until nicely browned on both sides.

Stewed Beef Chunks

This dish has a really nice gravy that is perfect over mashed potatoes.
By cooking the meat at a low temperature, it comes out nice and tender.
It is also so easy to make!!

STEWED BEEF CHUNKS

Beef stewing meat - about 2 - 2 1/2 pounds
2 tins condensed mushroom soup
1 package onion soup mix

In a casserole dish or roasting pan, mix all ingredients together.
Cover.
Bake at 325*F for 3 hours.

Lemon Pepper Linguini 🍋

This is a delicious pasta dish that makes a great meal when served with a salad.
Perfect for those meatless Monday's!

LEMON PEPPER LINGUINE
**************************
1 package linguini noodles 225-250 gm size
 3 tbsp olive oil
2-3 tsp lemon zest
3 tsp lemon juice
1/4 tsp salt
2-3 tsp coarsely ground pepper
1/4 - 1/2 cup grated Parmesan cheese

Cook pasta according to package.
Drain and return to pot.
Add olive oil, lemon zest, lemon juice, salt and pepper.
Toss to combine.
Serve with Parmesan cheese to sprinkle on top.

Strawberry Yogurt Shake

This is a great way to start your day off.
It also makes a very healthy snack.
I used to make this for my kids for after school and it was good to know that the snack was healthy for them.

STRAWBERRY YOGURT SHAKE

1 cup frozen sliced strawberries
1 cup low fat vanilla yogurt

Place sliced strawberries and yogurt in a blender.
Process until smooth.
If you need to, add a small amount of milk or orange juice to thin.

Easy French Onion Soup

This delicious soup can be made in 30 minutes.
It's satisfying and very flavourful.
We have it as meal sometimes served with garlic bread on the side.

EASY FRENCH ONION SOUP
***************************
3 large yellow or white onions - sliced
2 tbsp olive oil
4 cups beef broth
2 tbsp beef bouillon 
2 tbsp Worcestershire sauce
1/4 tsp pepper
Toasted baguette or french bread
Grated Parmesan cheese
💢💢💢
In a large pot, over medium heat, cook onions with oil until they are nicely browned and tender.
This should take about 15 minutes.
Add broth, bouillon, Worcestershire and pepper.
Bring to a boil.
Spoon soup into oven proof bowls and top with a slice of toasted bread and Parmesan cheese.
Broil for about a minute until the cheese is nice and brown.
Watch carefully as it doesn't take long.
Enjoy!

Cheese Spread 🧀

I love cheese and crackers or better yet, cheese and baguette.
Those fancy spreadable cheeses are delicious.
I can't seem to keep them in the house.
I finally figured out I had better try to make it myself.
After a lot of trial.....
 It was delicious  😊,
I came up with a simple and inexpensive version of those fancy cheeses.

SPREADABLE CHEESE

1 cup cream cheese - softened
3/4 tsp dried basil
1 1/4 tsp dill weed
2 tsp chives - chopped fine
1/4 - 1/2 tsp garlic salt

Mix all ingredients together until well blended.
Keep refrigerated until ready to use.

Rutabaga Fries 🍟

I know.... Your thinking ...WHAT??
Trust me though....these are actually good.
They are so much healthier than potatatoe fries too.
Try them...

RUTABAGA FRIES
******************
2 medium sized rutabaga - I find a single rutabaga enough for 2 people
2 tbsp olive oil
1 tsp seasoning salt
1/2 tsp black pepper
➰〰➰
Peel and cut rutabagas into long strips.
Place in a bowl or ziplock bag with oil, salt and pepper.
Place seasoned strips on a cooking sheet.
Bake at 425*F for 1 hour
Flip fries every 20 minutes to brown evenly.

Banana Pancakes 🍌

These moist pancakes are a crowd pleaser.
Easy to make with loads of banana flavour!!

BANANA PANCAKES

1 cup flour
1 1/2 tbsp sugar
2 tsp baking powder
Pinch of salt
1 egg
2 mashed bananas
1/3 cup milk
🍌🍌
In a large bowl, combine flour, sugar, baking powder and salt.
Add egg, bananas and milk.
You may need a little more milk if the batter is too thick.
🍌🍌
Fry pancakes in a frying pan with a tbsp of oil over medium-high heat until they start to bubble and the edges start to dry.
Flip pancake over and brown the other side.

Corn and Black Bean Salad

This is a great salad!
Chilled or at room temperature, this is superb.

CORN AND BLACK BEAN SALAD
*********************************
2 - 3 cups cooked rice
1 can black beans - rinsed
1 can corn nibblets - drained
1 red pepper - diced
1 green pepper - diced

Dressing
*******
1/2 cup water
1 1/2 tbsp cornstarch 
4 tbsp sugar
3 tbsp vinegar
1 tsp Worcestershire sauce
1/2 tsp dry mustard powder
1/8 tsp pepper
🌽🌽🌽🌽🌽🌽🌽
For the salad,
Mix cooked rice, black beans, corn, red pepper and green pepper.
🌽🌽🌽🌽
For the dressing,
In a small saucepan, mix cornstarch and water.
Heat over med/high heat until thickened.
Add sugar, vinegar, Worcestershire sauce, mustard powder and pepper.
Toss with rice mixture.
Chill until ready to serve.

Sweet Potatoe Fries

I love sweet potatoes.
Whether baked, mashed, casserole........
But these are my favourite.

SWEET POTATO FRIES
**********************
3 sweet Potatos - ends cut off and washed

 3-4 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp fresh ground pepper
1/4 tsp chilli flakes
Salt
🍟🍟
Cut the Potatos into long strips.
Soak in cold water for about an hour to remove some of the starch.
( that makes for a crispier fry)
Drain and dry Potatos.
In a large bowl, combine potatoes, oil and spices.
Mix well to coat all of the potato strips.
Put Potatos on a cooking sheet in a single layer.
Bake at 425*F for 30 minutes turning halfway through cooking.

Pasta with Peas and Bacon

This simple pasta dish is very flavourful and looks great.
Use any kind of pasta you prefer.

PASTA WITH PEAS AND BACON
******************************
Cook approximately 3 cups of dry pasta
💛
While pasta is cooking,
Boil 2-3 cups of frozen peas.
💚
Meanwhile.....
In a frying pan, 
Cook....
 10-12 slices bacon - diced
1/2 onion - diced
2 cloves garlic - minced
Drain off most ....but not all of the fat.
💙
When pasta is done, drain and return to pot.
Add in cooked, drained peas.
Add in bacon mixture.
💜
Toss with a bit of olive oil.
Serve with fresh grated Parmesan cheese for sprinkling on top.

Cheese Biscuits 🧀

CHEESE BISCUITS
******************
2 cups flour
4 1/2 tsp baking powder
2 tbsp sugar
1/2 tsp salt
1 1/4 cup grated cheddar cheese - sharp or old
1/3 cup oil
3/4 cup milk
🧀🧀🧀
In a large bowl, combine flour, baking powder, sugar and salt.
Add cheese and mix in.
Add oil and milk and stir to make dough.
Add more milk if you need to.
It needs to form a soft, but not sticky dough.
On a lightly floured work surface knead gently 10 times.
Pat 1" thick.
Use a biscuit cutter or a cup to cut out circles of dough.
Put onto an ungreased baking sheet.
Brush tops with a bit of milk to brown nicer.
Bake at 425*F for about 15 minutes or until they are a nice brown color.

BBQ LAMB BURGERS

2 lbs ground lamb
1/8 tsp Rosemary 
1/2 tsp thyme
1 clove garlic minced
1/8 tsp salt 
1/8 tsp pepper

Mix all ingredients together.
Form into 6-8 patties.
BBQ on medium heat until inside is just pink.
Serve on a bun with your choice of toppings.

APPLE MUFFINS WITH STREUSEL TOPPING

1 1/2 cups flour
1/2 cup sugar
3 1/2 tsp baking powder
1/2 tsp salt
1 egg
1/4 cup milk
1/4 cup oil
1 cup grated Apple

1/2 cup brown sugar
1/4 cup flour
1/4 cup butter
〰➰〰
In a large bowl, combine flour, sugar, baking powder and salt.
Add in egg, milk, oil and Apple .
Stir just until all is combined.

Spoon into greased muffin tins about 3/4 full.
🍎
For the topping, mix brown sugar, flour and butter until crumbly.
Sprinkle on top of muffins.
🍎
Bake at 400*F for 20-25 minutes.

Iced Chocolate Brownies

ICED CHOCOLATE BROWNIES

1 cup butter
1/2 cup cocoa
2 cups flour
2 cups sugar
4 eggs 
4 tsp vanilla

In a large bowl, mix flour and sugar...
Set aside.
〰➰〰
In a microwave safe bowl, melt butter.
Add cocoa to melted butter and stir well.
Mix in eggs and vanilla.
〰➰〰
Combine wet mixture with dry and stir until well combined.
Transfer to a greased 9x13" cake pan.
Bake at 350*F for 25-30 minutes.
〰➰〰 
When cool, ice.
1/4 cup butter
1/4 cup milk
1/4 cup cocoa powder
3 cups icing sugar

Easy Crockpot Pot Roast

Who doesn't love to come home at the end of the day to find dinner is ready?
This super easy pot roast does just that!
You put everything into the crockpot in the morning and by dinner time, it's cooked.

 ✨✨✨✨✨✨✨✨✨✨✨✨✨✨✨
EASY CROCKPOT POT ROAST
*****************************
1 Roast - I buy whatever is on sale
5 potatoes - quartered
8 carrots - halved or cut into chunks
1 onion - quartered
Salt
Pepper
2 tbsp beef bouillon powder
1 cup water
〰➰〰
Place roast into crockpot.
Season with salt and pepper.
Add vegetables.
Mix bouillon powder and water in a cup.
Pour mixture into crockpot.
Cover with lid.
Cook 8-9 hours on low or 4-5 hours on high.
〰➰〰
I like to make a gravy at the end by mixing 
2 tbsp cornstarch
1/2 cup water
Add to crockpot and cook on high for 10 minutes to thicken.

Old Fashioned Tea Biscuits

These are so easy to make.
Perfect right out of the oven with a little butter or jam.
Serve them with dinner and your family will be so happy!

OLD FASHIONED TEA BISCUITS

2 cups flour
3 tbsp sugar
1 tsp salt
4 tsp baking powder
1/2 tsp cream of tarter
1/2 cup margarine or butter -cold
1 cup milk

In a large bowl combine dry ingredients.
Cut in margarine until mixture is crumbly.
Add milk stirring quickly to combine the ingredients.
Turn out onto a lightly floured work surface and knead the dough gently 10 times.
Pat dough until about 3/4 " thick and then cut with a biscuit cutter or with a glass.
Place on a greased pan.
Brush tops of biscuits with milk.
Bake at 450*F for 12-15 minutes

1 3/4 cups flour 
3 tsp baking powder
1/2 tsp salt
1/4 cup margarine 
1/2 cup sugar
1 egg
3/4 cup milk
3/4 tsp vanilla
1 1/2 cups blueberries

In a large bowl, cream butter and sugar.
Add egg, milk and vanilla.
Mix well.
Add flour, baking powder and salt.
Stir just to moisten.
Gently fold in blueberries.

Spoon into greased muffin tins.

Bake at 400*F for about 20-25 minutes.

Hearty Macaroni Vegetable Soup 🍜

It's getting to be the time of year that I make a lot of soup.
I love the smell of a soup gently simmering on the stove.
This is an extremely simple soup that smells and tastes fantastic!

HEARTY MACARONI VEGETABLE SOUP
***************************************
5-6 cups beef broth
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
1 large tin canned tomatoes (I like the one with herbs and spices)
3/4 cup macaroni noodles 
1/2 tsp salt 
1/2 tsp pepper
Parsley for garnish if desired
➰〰➰
Combine all ingredients except parsley in a large pot and bring to a boil.
Cover and simmer for 20-30 minutes until vegetables and macaroni are cooked.
Garnish with parsley if you desire.

CHOCOLATE BROWNIES

1/2 cup margarine
1/4 cup cocoa powder
2 eggs
1 cup white sugar
3/4 cup flour
Pinch of salt

In a saucepan, melt margarine.
Add cocoa powder.
Remove from heat.
In a large bowl, beat eggs until they are nice and frothy.
Do not stir, but add sugar,flour,salt and cocoa mixture to eggs.
Stir to combine.
Put batter into a 8x8 pan and bake at 350*F for about 25-30 minutes.
Leave plain or frost when they are still a little bit warm.
