How To Test Baking Soda

Do you have a box of baking powder that you are unsure of how old it is?
If the soda isn't active, your recipe will not turn out right.


Here is a simple way to check.

Take a 1/2 cup of hot water.
Add 1 tsp of baking soda.

It should bubble.
If not....throw it out and buy a new box.

Butterscotch Haystack Cookies

Who doesn't remember thes cookies growing up?
They were one of my favourites.
So easy to make.
No oven needed.


Only THREE ingredients!
Could anything be easier?

BUTTERSCOTCH HAYSTACK COOKIES
**************************************

2 cups butterscotch chips
1/2 cup margarine or butter
2 -2 1/4 cups dry Chinese chow mien noodles

🔹🔸🔹

Melt the butterscotch chips and margarine in a medium saucepan over low heat.
Add noodles.
Mix.
Drop by spoonfuls onto wax paper.
Let harden.

20 Minute Stroganoff 🍽

Nothing fancy with this dish, but darn it's good!
On the table in 20 minutes.

20 MINUTE STROGANOFF

Put a pot of water on to boil some egg noodles.

🔹
1 lb lean ground beef
1 medium onion chopped
2 tbsp flour
1 can sliced mushrooms - drained
1 tin condensed cream of mushroom soup
1/2 cup sour cream
1/8 tsp pepper
🔹🔹
While pasta is cooking
Cook ground beef and onion in a large frying pan. Drain any fat.
Add flour, stir.
Add mushrooms, soup and pepper.
Cook about 10 minutes. Stir occasionally.
Add sour cream. Heat through.

Serve over top of noodles with a salad or green vegetable on the side.

Homemade Ice Pack 🤕

This is something everyone should have in the freezer.
It's easy to hurt yourself.
Sometimes an ice pack is all you need.
This simple homemade ice pack is perfect.
It never freezes solid.

Simply mix
3 parts water to 1 part rubbing alcohol

EASY Chickpea Salad 🌟

This is such an easy recipe.
It also tastes great!


You can eat it right away, but it gets better as it sits in the refrigerator for a couple of hours.

EASY CHICKPEA SALAD

2 carrots - thinly sliced
6 radishes - thinly sliced
1/2 English cucumber - quartered and sliced
1 red pepper - diced
1 can chickpeas - drained and rinsed
✨✨✨✨
3 tbsp red wine vinegar
1/4 cup olive oil
1/2 tsp tarragon
2 tsp oregano
1/8 tsp garlic powder
1/4 tsp salt
✨✨✨✨
Mix all ingredients together in a large bowl.
Refrigerate.
Stir before serving

Easy and delicious !!

How To Keep A Cut Avacado

We all know avacados are good for us.
But sometime a whole avacado is just too much to use. 
So in the fridge it goes....
Maybe wrapped in plastic wrap....
Rubbed with oil.....
And still it turns a awful brown/ black color....
No more!!


I will let you in on a secret I have used for years....

Simply put a slice of onion in a container along with the avacado.

I know...its way to simple.

It works for me!

Apple Nut Loaf 🍎🍎

This tender nutty loaf is a winner.
It goes together in minutes and bakes in about an hour.
I add raisins, but if you don't like raisins, just leave them out.

APPLE NUT LOAF
****************
1/2 cup butter
1 cup sugar
2 eggs
3/4 tsp vanilla 
1 Apple diced or shredded. I leave the peel on
2 cups all purpose flour
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
3/4 cup chopped walnuts
1/2 - 3/4 cup raisins soaked in hot water for 5 minutes and then drained
🔸
Heat oven to 350*F
Step 1) Beat butter,sugar,eggs and vanilla until smooth in a med/ lg bowl.
Step 2) Stir in diced/shredded apple and soaked raisins.
Step 3) Add in dry ingredients and stir just to combine.
Step 4) Put into greased loaf pan
Step 5) Bake 55-65 minutes or until knife comes out clean.

Let sit in pan 15 minutes before removing to cooling rack.

Buttermilk Pancakes

Buttermilk pancakes with maple syrup and butter......
Yum.
They make a special treat for breakfast and they also make a great meal for dinner too!



Forget the packaged mixes from the store.
These are so easy to make from scratch!

BUTTERMILK PANCAKES 
************************
2 eggs
2 cups buttermilk ( add 1 tbsp vinegar to 1 cup of milk to make buttermilk)
1/4 cup oil
1 3/4 cups all purpose flour
2 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Step 1) Heat frying pan to medium/high
Step 2) In a large bowl, combine eggs, buttermilk and oil. Add dry ingredients.
Step 3) Stir until all the lumps are gone.
Step 4) Lightly oil frying pan. 
Step 5) Pour about 1/3 cup batter into pan. Less if you want smaller pancakes.
         Cook until bubbles form and the edges start to dry.
            Flip and cook other side.
🌞 Breakfast is served!

Honey Garlic Chicken

Who doesn't like to go out for honey garlic wings?
Making them at home is easy and economical.
And it doesn't have to be wings...
How about drumsticks, breasts or even thighs?


This dish is great served with rice and a salad to make a complete meal.
Enjoy!

HONEY GARLIC CHICKEN 
*************************
1/2 cup soy sauce
3 minced garlic cloves 
5 tbsp honey 
1/4 cup lime or lemon juice
2 tsp sriracha sauce
4 tbsp sesame oil
2 tbsp cornstarch
1/4 tsp pepper

Step 1) Heat oven to 350*F
Step 2) In a medium/large bowl, mix all of the ingredients until well blended.
Step 3) Take whatever chicken you will be using and fry to get a nice golden brown on both sides.
Step 4) Oil a oven safe pan large enough for the chicken and transfer chicken to pan.
Step 5) Pour sauce over top of chicken.
Step 6) Cook until chicken is cooked through.
Step 7) Flip chicken, spoon sauce over top and broil for 2-3 minutes.


This is soooooo good!!!

Mom's Soft and Chewy Peanut Butter Cookies

That's right....
Nobody makes a better cookie than Mom.
This is my recipe that's is sooooooo good.
Just follow my instructions for a soft and chewy cookie...
Always...

Heat oven to 375*F

**** Place sheets of foil on counter to cool cookies ****

Mom's Peanut Butter Cookies 
**************************

1 1/4 cup packed brown sugar 
3/4 cup peanut butter 
1/2 cup shortening ( I use Crisco)
3-4 tbsp milk
1 tsp vanilla 
1 3/4 cup flour
1 tsp baking soda 
1/2 tsp salt
1 egg

Combine brown sugar, peanut butter,shortening,milk and vanilla in a large bowl. Mix at medium speed of mixer until well blended. Add egg.
Mix until blended.
Add in flour, baking soda and salt. Mix until blended.
Roll into 1-2" balls .
You should be able to get 3 across on the cookie sheet.
Press down with fork.
Bake one sheet at a time at 375*F for 7-10 minutes, or until set.
DO NOT OVERBAKE
Transfer to foil until cooled.

Easiest Cashew Chicken

Really....
It is the simplest, fasted way to make cashew chicken.
Plus....it as absolutely delicious.
In the time it takes to make the rice, this dish will be finished!


This will give 4 or 5 adults a good portion each.

EASIEST CASHEW CHICKEN 
**************************

5 chicken breasts - boneless, cut into 1" pieces
3 tbsp cornstarch 
4 tbsp oil
4 garlic cloves, minced
3 tbsp rice vinegar
6 tbsp hosin sauce
1/3 cup water
8 green onions chopped ( separate the green parts and use for garnish) 
1 1/2 cups unsalted, roasted cashews

In a med/lg bowl toss cornstarch and chicken. 
Chicken should be well coated.

In a wok or large pan, heat the oil over medium-high heat.
Put in the chicken and cook and toss until it is browned. 
This should take 8-10 minutes.
You may need a bit more oil if the chicken sticks too much to the pan.
Add in the minced garlic and the onion.
Cook and toss for 2-3 minutes.
Add the vinegar, hosin sauce and water to the pan.
Cook and toss until chicken is cooked through.
This should take 3-4 minutes more.
If the sauce is too thick add a bit more water to thin it out.
Take off heat and stir in cashews.
Serve with green part of onions as garnish.

Fast and Easy Oven Baked Beans

This is a great way to make tinned pork and beans super special.
It's BBQ time and this is a great side dish.



Oven Baked Beans
****************
3 tins pork and beans
1 cup chopped bacon - cooked
1 cup chopped onion - cooked
2 tbsp molasses 
4 tbsp brown sugar

In an oven safe dish put all ingredients.
Stir.
Cover.
Put in 300*F oven for 1 hour
Uncover and reduce heat to 275*F for 45 minutes 

Delicious!

Fast Chicken Pesto Pizza🍕

Yes.... The Dreaded Question......
What's for dinner?
Every day,
Day in....day out.
We as parents have a family to feed.
But trying to come up with something the family will eat....
It can be a challenge.
Pizza is always a hit.
If you are like me though... 
Pepperoni gets a little tiresome after awhile.
This is a great alternative.
Chicken Pesto Pizza

Trust me.... Even little kids love this!
The dough takes only minutes to make and turns out EVERY time.
Your family will think you are amazing!

PIZZA DOUGH 
**************

1/2 to 3/4 cup fairly warm water
1 tbsp yeast
1 tsp white sugar 
2 cups all purpose flour 
1 tbsp oil
1/4 tsp salt

Bake at 425*F for 15-20 minutes 
This makes enough for 1 pizza.
Double for two.

Mix 1/4 cup of warm water, yeast and sugar until yeast is dissolved.

Set aside for 5 minutes or so. 
Mixture will get bubbly.

Meanwhile..combine flour, oil and salt in a large bowl.

After the yeast has doubled and is all bubbly add it to the flour mixture.

Mix together and add enough of the extra warm water to make a nice dough that doesn't stick to your hands or the bowl.Add a bit more flour if you have to.

Now put a bit of oil in the bowl and roll the dough to cover in oil.

Next cover bowl with plastic wrap and a clean tea towel and let rise in a warm place.
I like to put it in the oven and turn on the light. The lightbulb supplies just the right amount of warmth.

Let it rise for 45-60 minutes.

Give the dough a quick mix with your hand to let out the air.

Spread onto an oiled pizza pan or (cookie sheet for thinner crust)
I like to lightly oil my fingers to spread the dough as it makes it a bit easier.

Add topping.
For this pizza, I use jarred pesto sauce.
This can be found in the spaghetti sauce area of most grocery stores.

Next I put on cooked chicken which I have chopped.
I also added some thinly sliced onions because we like them.

Top with mozzarella cheese.

Bake at 425*F for 15-20 minutes.

Super EASY Cinnamon Bread 🍞

Who doesn't LOVE homemade bread?
And cinnamon bread is my favorite.
Soft and gooey.
Topped with icing....or not......

CINNAMON BREAD 
******************

1/2 cup warm milk
1 tsp sugar
2 tsp yeast
3 1/3 cups all purpose flour 
1 1/2 tsp baking powder 
1 tsp salt
3/4 cup plain yogurt 
1 egg

Combine warm milk, sugar and yeast in a small bowl.
Set aside to let mixture activate and become bubbly.

Meanwhile....

In a large bowl of your tabletop mixer, food processor or in a large bowl with a hand mixer...
Add flour, baking powder, salt, yogurt and the egg.
Mix to combine.

Add in yeast mixture and mix well.

The dough should be soft but not sticky.
If it is too wet, add more flour and if it is too dry, add a bit of warm water.

Transfer to lightly floured work surface and roll out to a rectangle a little wider than your bread pan.
If your pans are smaller than a loaf of bread, divide dough in half and make two smaller ones.

Dough should be about 1/2 inch or so thick.

Spread dough with a nice even layer of butter. Like you are buttering a slice of bread.
Now sprinkle with brown sugar to cover the butter. A nice even layer.
Next sprinkle with cinnamon. I like cinnamon, so I use a fair bit. A couple of tablespoons anyway...
More or less depending on your own preferences.
I added raisins because I like them. About 1/2 cup.

Roll up and place in a greased pan seam side down.

Let rest about 20-30 minutes on the counter.

Bake at 425*F for 20 minutes
Cover the top with tinfoil ( so it's not too dark) and continue baking 15 minutes more.

Take out of the oven and try not to eat it until it has cooled a little bit anyway.

I had to have a slice.....no willpower 🙃

6 large potatoes
1/3 cup vegetable oil
Seasoning salt
Pepper

Cut potatoes into wedges.
Put in to a ziplock bag.
Add seasoning salt and pepper.
Seal bag and shake.
Spread onto a cooking sheet.
Bake at 400*F for 40-45 minutes.

This is a classic no-bake recipe.
I think every college kid has made it as it requires little cooking skills and tastes great!

NO BAKE CHOCOLATE COOKIES

In a large bowl combine

2 cups uncooked oatmeal 
1 cup coconut
------------------------------------------------

In a medium saucepan combine

1/2 cup butter 
2 cups sugar
1/2 cup cocoa powder
1/2 cup milk 
1/2 tsp vanilla
1/4 tsp salt
Bring to a boil stirring constantly 
--------------------------------------------------
Add chocolate mixture to oatmeal/coconut mixture
Stir well
Drop by moundfuls onto wax paper lined trays.
Put into refrigerator to harden for 20-30 minutes

1 can black beans - rinsed and drained
1 can corn nibblets - drained
1 pepper diced - red,yellow,orange or green 

Corn chips - in the potatoe chip aisle
Catalina salad dressing

Mix beans, corn and pepper in a medium bowl

Serve with a dish of corn chips and Catalina dressing to top

Holy #%!£¥ !!
That's easy...

Yep....it sure is. 😀
And guess what?
It's really good too!

That's right...another post with a do-it-yourself cleaner.
Why?
Because YOU DON'T NEED CHEMICALS to clean your house!
(You also don't need chemicals in your food.. but that's another blog)

At this time of year it's nice to be able to see outside😄
This simple cleaner leaves those windows, mirrors and glass doors sparkly clean.
The ingredients may sound a bit weird, but it really does work!!

Creamy Brocolli Soup🍲

I love soup.
I make it all the time.
Usually I just throw leftovers into a pot and create a delicious meal.
Today I have leftover brocolli in the fridge.
Frozen or fresh works too!

CREAMY BROCOLLI SOUP
************************

1 medium onion - chopped
1 tbsp oil

1 cup diced celery 
1 cup diced carrot
4 cups chicken broth
1/4 tsp salt
1/4 tsp pepper

2 cups chopped cooked brocolli 

2 tbsp butter
2 tbsp flour
2 cups milk

Cook onion in oil.
Add celery, carrot, chicken broth, salt and pepper.
Simmer until vegetables are soft. About 20 minutes.
Add chopped brocolli 

In a small saucepan, melt butter. Add flour mix well.
Add milk and stir until thickened.  

Add milk mixture to soup. 
Stir and cook 10 minutes more.

Soups on!

EASY Focaccia Bread🌟

 Yes...I said EASY !!
Making bread doesn't have to be a labour intensive ordeal.
This delicious focaccia bread is a perfect example.
It is made from scratch, and I promise that even if you think you can't make bread....you CAN make this!!

Try it plain or dipped in balsamic vinegar and olive oil.
Trust me .....it is sooooooo good. 😋

FOCACCIA BREAD
*****************
1/2 cup warm milk
1 tsp sugar
2 tsp yeast
3 1/3 cups all purpose flour
1 1/2 tsp baking powder
1 tsp salt
3/4 cup plain yogurt ( I use Greek yogurt, but any will do)
1 egg

Combine warm milk, sugar and yeast in a small bowl. 
   Set aside to let mixture activate and become bubbly.

Meanwhile ....

In a large bowl of your tabletop mixer, food processor or in a large bowl with a hand mixer.....
    Add flour, baking powder, salt, yogurt, and the egg.

Add in yeast mixture and mix well.

The dough should be soft but not sticky. 
     If it is too wet, add a bit more flour, and if it is too dry, add a bit of warm water. 

 Transfer onto a lightly floured surface and using your hands, pat down to desired shape. 
        I used a pizza pan so I made mine round.

Transfer onto lightly oiled pan. 
      I finished shaping mine on the pan.

Cover with a tea towel and let rest for 20 - 30 minutes.

Heat oven to 425 * F

Poke your fingers into bread to made indentations.
Drizzle with olive oil. Spread around with fingers...gently.
Sprinkle with course salt and rosemary.
Bake 15-20 minutes or until a nice light brown.
Take out of the oven and brush with a bit more olive oil. 

              Yum...

BACON Soda Cracker Candy..😋...EASY

So here is a recipe that is really easy and soooooooooo good.
Everybody loves bacon, right?
Well this turns your favourite breakfast food into a candy delight!!
The saltiness of the bacon and the sweetness of the brown sugar is to die for!!


So when bacon goes on sale, buy an extra pound (or two) and give this recipe a try. 
You won't be disappointed!

Bacon Soda Cracker Candy 
**********************

1 1/2 sleeves of soda crackers. 
          (the kind you use for soup- and not whole boxes, just the single sleeves inside of the box)
1 1/4 cups butter
1 1/4 cups light brown sugar
1 lb bacon


Heat oven to 400*F

Take a cookie sheet with sides and line with parchment paper or foil.
I use foil and spray it with cooking spray so it doesn't stick.

Chop up bacon and cook it until it is crispy.
Drain it on paper towel and pat to get as much fat off as possible.
Set bacon aside.

Layer the cookie sheet with a single layer of crackers.
Set pan aside.

In a saucepan, put butter and brown sugar and heat to boiling over medium heat.
**This is VERY HOT....so please be careful!!
Continue stirring and boil for 3 minutes.

CAREFULLY pour mixture over soda crackers.

Place in the oven for 5 minutes.

Sprinkle bacon over top.

Break into pieces.

You are going to LOVE the caramel flavour with the saltiness of the bacon.....yummy 
I can't wait for bacon to go on sale again!!!

Simply take an empty spray bottle
Add 1 tsp of scent beads
Add a couple of cups warm water
Give it a good shake
Let sit for about 5 minutes to dissolve beads
Gently shake
Spray

10 Minute Greek Salad 📌

Forget those bottled dressings...
Can you even pronounce all of the ingredients?
This super easy,fast recipe is DELICIOUS 


I used cherry tomatoes because I found them on a great sale this week, but any tomatoe is good.

This dressing tastes so much fresher than the bottled kind. 
Plus just a few ingredients

GREEK SALAD 
**************

2-3 cups tomatoes cut bite size
1 cucumber cut bite size
1/2 cup sliced olives
1/2 cup cubed feta cheese

Dressing
^^^^^^^^
1/4 cup olive oil
1/8 cup red wine vinegar
1/4 tsp salt
1/8 tsp pepper
1 1/2 tsp oregano 
1/4 tsp garlic powder

In a medium bowl, place cut up tomatoes, cucumbers, olives and feta cheese.
Combine dressing ingredients in a small bowl. Mix well.
Add to salad and mix to combine.
